Vegan Avocado Egg Rolls

With restaurants being closed all over the world there is one appetizer I miss most. Avocado Egg Rolls from Cheesecake Factory. Here is a vegan recipe I created very close to tasting like a restaurant quality dish.




Avocado Egg rolls

Ingredients:

  • 1 Pack Won ton Wraps

  • 3 Avocados, diced

  • 1 Cup Corn, roasted

  • ⅓ Cup Sun-Dried Tomatoes, chop

  • ½ Red Onion, chop

  • ½ Tsp Salt and Pepper

  • 2 Cups Coconut Oil for frying


Preparation 45 minutes • Serves 4

  1. Mix together diced avocados, corn, chopped sun-dried tomatoes, red onions, salt and pepper.

  2. Lay out your won ton wrap and brush with water around the borders of the won ton.You can use egg wash too if vegetarian.

  3. Place a tablespoon of the avocado mix into the won ton.

  4. Now fold won ton as shown on the package.

  5. Seal the won ton tight with water.

  6. Fry the egg roll until golden brown.

  7. Allow the egg rolls to slightly cool and serve with Cilantro Turmeric Sauce.

Cilantro Turmeric Sauce

Ingredients:


  • 1 Lime, juice

  • ½ Cilantro, chop

  • ¼ Tsp Turmeric

  • 1 Tbl Sun-Dried Tomatoes, chop

  • ⅓ Cup Olive Oil

  • ½ Tsp Salt and Pepper

Blend all ingredients together except oil. Add oil while blending. Serve with Avocado Egg rolls.

Chicken Avocado Egg Rolls


Ingredients:

  • 1 Pack Won ton Wraps

  • 2 Chicken Breasts

  • 3 Avocados, diced

  • 1 Cup Corn, roasted

  • ⅓ Cup Sun-Dried Tomatoes, chop

  • ½ Red Onion, chop

  • ½ Tsp Salt and Pepper for mix and another ½ Tsp for chicken

  • 2 Cups Coconut Oil for frying


Prepare Chicken Breasts


Place a pan on medium to high heat. Add a tablespoon of coconut oil to the pan. Sprinkle salt and pepper on both sides of chicken breasts. Cook chicken on both sides for at least 6-7 minutes on both sides. Add a tablespoon of water and cover for another 6-7 minutes. After cooking chicken begin to shred the chicken with a fork. Slight chop the shredded chicken. Add the chicken to the rest of the avocado mix.
